Chukka kura curry

Ingredients:
Chukkakura(chopped) 2 cups
Menthi leaves(fenu greek leaves) 1/2 cup
Onions 1
Oil 2 tbs
Cumin seeds 1/2 tbs
Mustard seeds 1/2 tbs
Chillis 5
Garlic cloves(crushed) 4
Salt 1 tbs
Turmeric a pinch
Coriander leaves 1/4 cup
Curry leaves 1 stem

Recipe:
1.Heat a pan.Add oil.
2.Add cumin seeds,mustard seeds,chillis,garlic,oninos,curry leaves and menthi leaves.Fry it for some time.
3.Then add chopped Chukka kura and cook it for 5-6 mins.
4.Add coriander leaves.Mix it well and switch off the stove.

Gobi Manchuria



Ingredients:
Cauliflower 20 florets
Capsicum 1
Onoin 1
Green onions (spring onions chopped) 1/4 cup
Ginger garlic(small pieces) 1 tbs
Maida 1 cup
Corn flour 1/2 cup
Water
Tomato maggi sauce(hot and sweet) 3 tbs
Soya sauce 1 tbs
Red chilli powder 1 tbs
Salt to taste
Oil
Cumin seeds 1/4 tbs
Mustard seeds 1/4 tbs

Recipe:
1.Take one bowl.Add maida,corn flour,red chilli powder,salt and enough water to make medium batter(not thick and thin).
2.Heat oil for deep fry.
3.When oil becomes hot....take the cauliflower florets,dip into the batter and put in the oil one by one gently.
4.Fry them till those become lite brown.
5.Chop onions and capsicum.
5.Take another pan.Heat it.Put some oil.
6. Add cumin seeds,mustard seeds and let it splutter.
7.Then add chopped onions,capsicum and ginger garlic.Fry for some time.
8.Add tomatoe sauce,soy sauce and then spring onions.Let it cook for some time.
9.Finally add the fried florets to the above mixture.

Paneer menthi



Ingredients:
Onions 2 medium size
Tomatoes 4
Green chillis 6
Oil 2 tbs
Cumin seeds 1/2 tbs
Mustard seeds 1/2 tbs
Turmeric powder:a pinch
Salt to taste
Garam masala 1 tbs
Coriander powder 1/2 tbs
Paneer 15 cubes
Menthi leaves 1 cup
Sour cream 2 tbs(optional)
Water to make as gravy
Ginger garlic paste.

Recipe:
1.Heat pan.Add 1 tbs oil.Fry chopped onions,chillis together until it turns to brown.
2.Add tomatoes..fry it for a minute.Switch off the stove and let it cool down.
3.Then put fried items in the blender and grind it .
4.Heat the pan.Put 1/2 tbs of oil and fry the menthi leaves for some time till raw smell goes off.
5.Take fried menthi leaves into the bowl and keep it aside.
6.Add oil to the pan which you have used before..When it becomes hot, add cumin seeds, mustard seeds, ginger garlic paste and Turmeric powder.
7.Then add the mixture you have grinded before.
8.Add sour cream,garam masala,salt,coriander powder and enough water...stir it well.
9.Add Paneer cubes,fried menthi leaves.
10.Cook for 15 to 20 mins on medium heat until paneer becomes soft.

Cucumber(keera dosakaya) pachadi

Ingredients:
Cucumber 1
Tamarind(lemon size)
Sesame seeds(roasted) powder 2 tbs
Green chillis 3
water
Salt to taste.
Oil 1 and half tbs.
Cumin seeds 1/4 tbs
Mustard seeds 1/4 tbs
Udad dal 1/4 tbs
Coriander leaves 1/4 cup
Curry leaves 4
Turmeric 1/4 tbs

Recipe:
1.Chop cucumber into small piecesand take them into a bowl.
2.Soak tamarind in less water.
3.Heat a pan.Put oil.Fry green chillis for a while.
4.Then remove chillis from pan and keep them aside.
5.Then put soaked tamarind with water in pan and fry it till becomes thick.
6.Cool down the tamarind pulp and then put this pulp,chillis,salt in blender...Make as a paste.
7.Add this mixture,sesame seed powder to chopped cucumber and mix it well.
8.For tadka..Heat a pan.Put oil.Add cumin seeds,mustard seeds,udad dal,curry leaves and turmeric.
9.Add this tadka,coriander leaves to cucumber mixture and mix it well.

Palli chutney

Ingredients:
Groundnut 1/4 cup(roasted)
Split dal(putnaalu) 1/4 cup
Coconut powder 1/4 cup
Green chillis 3
Salt to taste
Coriander leaves 1/4 cup
water

Recipe:
1.Grind groundnuts,split dal,coconut together.
2.Add chillis,coriander, salt and enough water to the above mixture
and grind it till everything mix together.
3.You can make tadka and add it to chutney.

This chutney is fantastic with idli,vada,pongali,dosa and with most of the snacks.

Pesara Garelu

Ingredients:
Moong dal 1 and half cup
Green chilli 3(chopped into small pieces)
Salt to taste
Water 3 cups
Ginger garlic paste 1 tbs
Curry leaves 6(chopped)
Mint 1/2 cup(chopped)
Coriander leaves 1/2 cup(chopped)
Oil (for deep fry)

Recipe:
1.Soak the moong dal in water for 5,6 hours until moong dal becomes soft.
2.Grind the dal as thick batter using little bit of water.
3.Then take the paste into bowl.Add green chilli,ginger garlic paste,curry leaves,mint,coriander,salt and mix it well.
4.Heat oil in a wok.
5.Take small amount of batter on the left hand palm.Flatten it with the right hand fingers
and drop it slowly into the hot oil.Repeat this process to make 5, 6 pieces.
6.Fry them till those turn to brown colour.



Jeera rice

Ingredients:
Rice 2 cups (cooked)
Oil 1 and half tbs
Cumin seeds 1 tbs
Cumin powder 1 tbs
Mustard seeds 1/4 tbs
Ginger Garlic paste 1/2 tbs
Turmeric powder 1/4 tbs
Mint 1/2 cup(chopped)
Coriander Leaves 1/2 cup (chopped)
Green chillis 3 (chopped)
Salt to taste

Recipe:
1.Heat the pan.Put oil.Add cumin seeds,mustard seeds,Ginger garlic paste,Mint ,coriander leaves, turmeric,cumin powder,salt one by one.
2.Fry it for 1 min.
3. Then add Rice to the mixture and fry it for few more minutes.
